Sheet-Pan Salmon with Asparagus and Potatoes

One pan, 25 minutes, complete dinner. Lemon-garlic salmon, crispy potatoes, charred asparagus. The default weeknight dinner.

Ingredients

  • Salmon fillets, skin-on: 4 × 150 g (5 oz) portions
  • Baby potatoes: 700 g (1.5 lb), halved (or quartered if large)
  • Asparagus: 450 g (1 lb), tough ends snapped off
  • Olive oil: 3 tbsp, divided
  • Garlic: 4 cloves, minced
  • Lemon: 2 (one zested + juiced for salmon, one cut into wedges to serve)
  • Fresh dill or parsley: 2 tbsp, chopped
  • Salt: 1 1/2 tsp, divided
  • Black pepper, freshly cracked
  • Optional: 1/2 tsp smoked paprika for the potatoes

Instructions

    Preheat oven to 220°C (425°F). Line a sheet pan with parchment.

    Toss potatoes (cut-side up where possible) with 1 tbsp olive oil, 1/2 tsp salt, paprika if using, and pepper. Spread on one third of the pan. Roast 15 minutes.

    While potatoes roast, mix marinade: 1 tbsp olive oil, half the minced garlic, lemon zest, juice of 1 lemon, salt, pepper. Brush onto salmon.

    Toss asparagus with 1 tbsp olive oil, remaining garlic, salt, and pepper.

    Pull pan from oven. Push potatoes to one side. Add salmon (skin-side down) in the middle, asparagus on the other third.

    Return to oven for 10-12 minutes, until salmon flakes easily with a fork (internal temp 52-54°C / 125-130°F for medium) and asparagus is tender-crisp.

    Sprinkle salmon with fresh dill or parsley. Serve with lemon wedges.

Notes

Watch the salmon at the 10-minute mark — thicker fillets may need 12-13 minutes, thinner ones might be done at 9. The thickest part should flake but still be slightly translucent in the very center; carryover heat finishes it perfectly.

Why This Works

One pan. 35 minutes. Real dinner. Crispy-edged potatoes, tender salmon, charred asparagus tips, finished with bright lemon and dill. This is the recipe that makes weeknight dinner feel less like a project.

The Method

Stagger the cook. Potatoes need about 25 minutes; salmon and asparagus need 12. Start the potatoes alone, then add the rest with 12 minutes left on the clock.

Pull the salmon early. 52-54°C (125-130°F) internal is medium and perfect. The fish continues cooking on the pan for a minute or two after — if you wait until it’s “done,” it’s already overcooked.

Don’t crowd the pan. Use a half-sheet pan (33×46 cm / 13×18”). Crowded vegetables steam instead of roast. Scaling for 6? Two pans on adjacent racks, swap halfway.

Variations

  • Lemon caper: scatter 2 tbsp capers across the salmon before baking
  • Pesto-glazed: brush 2 tbsp basil pesto over the salmon instead of the lemon-garlic marinade
  • Spicy maple: glaze with 1 tbsp maple syrup + 1 tsp soy sauce + 1/2 tsp red pepper flakes
  • Greek: top finished salmon with crumbled feta and chopped kalamata olives

Leftovers

Salmon holds for 3 days refrigerated. The day-after move: flake the salmon over greens, chop the leftover asparagus, drizzle with olive oil and lemon. Lunch in 2 minutes.
