Browned Butter Dark Chocolate Chip Cookies

Ingredients

  • Dark brown sugar: 300 g (1 1/2 cups packed)
  • Granulated sugar: 200 g (1 cup)
  • Eggs: 4 large
  • Vanilla extract: 20 g (4 tsp)
  • All-purpose flour: 650 g (5 1/4 cups)
  • Baking soda: 10 g (2 tsp)
  • Fine salt: 8 g (1 1/2 tsp)
  • Dark chocolate chips/chunks: 500 g (3 cups)
  • Optional flaky salt: for finishing

Instructions

    Brown the butter in a saucepan over medium heat, stirring frequently, until deep golden and nutty (8–12 minutes).

    Pour into a bowl and cool 10–15 minutes until warm, not hot.

    Whisk in brown sugar and granulated sugar until glossy.

    Add eggs one at a time, whisking well after each.

Notes

The 24-72 hour chill time is crucial for developing complex flavors. Browning the butter adds a nutty, caramelized depth that makes these cookies exceptional. The freezer method means you can have fresh-baked cookies whenever you want.

Why Brown the Butter

Browning butter isn’t optional here. You’re taking milk solids and caramelizing them until they’re nutty and complex. That’s where the flavor comes from. Regular melted butter makes regular cookies. Browned butter makes cookies people remember.

Watch it. It goes from perfect to burnt in about 15 seconds. Pull it when it’s deep golden and smells like toasted hazelnuts.

The Long Chill

24 hours minimum. 48-72 is better. The dough needs time to hydrate fully - the flour absorbs moisture, flavors meld, everything settles. Fresh dough bakes fine. Chilled dough bakes incredible.
